These Easy Mini Muffin Tin Pizza Bites are a quick, 4-ingredient snack made with biscuit dough, pizza sauce, mozzarella, and pepperoni. Ready in under 25 minutes, they’re perfect for busy weeknights, game day, or lunchboxes.

Ingredients

Scale
  • 1 can (16.3 oz) refrigerated biscuit dough (e.g., Pillsbury Grands! Flaky Layers)
  • 1/2 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices
  • 1 tablespoon melted butter (optional)
  • 1/2 teaspoon garlic powder (optional)
  • Fresh basil or parsley for garnish (optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 24-cup mini muffin tin generously with nonstick cooking spray.
  2. Open the can of biscuit dough. Separate biscuits and cut each into 4 equal pieces (about 32 pieces total).
  3. Press one piece of dough into each mini muffin cup, forming a small cup shape that comes about halfway up the sides.
  4. Add about 1 teaspoon of pizza sauce to each cup.
  5. Sprinkle about 1 tablespoon of shredded mozzarella over the sauce in each cup.
  6. Top each cup with 3-4 mini pepperoni slices (or 2-3 quartered regular slices). Press gently into the cheese.
  7. Optional: Brush edges of biscuit dough with melted butter and sprinkle with garlic powder.
  8. Bake for 10-12 minutes, until biscuit edges are golden brown and cheese is bubbly and starting to brown.
  9. Let cool in the pan for 2-3 minutes, then remove using a small spoon or offset spatula.
  10. Transfer to a cooling rack or serving plate. Garnish with fresh basil or parsley if desired. Let cool another 2-3 minutes before serving.

Notes

Don’t overfill the biscuit cups with sauce to avoid sogginess. Press dough up the sides of the muffin cups. Use room temperature biscuit dough for easier handling. Rotate pan halfway through baking for even browning. Let rest in pan after baking to set. For best texture, serve fresh. Can be assembled ahead and refrigerated up to 4 hours before baking. Freeze baked bites for up to 3 months.
