  • 1/2 cup honey
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mix-ins (e.g., dark chocolate chips, chopped peanuts)

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a large microwave-safe bowl, combine peanut butter, honey, and melted coconut oil. Microwave in 30-second bursts, stirring between each, until smooth (about 60-90 seconds total).
  3. Stir in vanilla extract and salt until well combined.
  4. Add rolled oats and stir until every oat is coated. The mixture should be thick and sticky.
  5. Fold in mix-ins gently (if using chocolate chips, let mixture cool slightly first to prevent melting).
  6. Transfer mixture to the lined pan. Press firmly and evenly using a piece of plastic wrap or wax paper over the top.
  7. Refrigerate for at least 2 hours (3-4 hours is better) until firm.
  8. Lift the block out using parchment overhang. Cut into 12 even bars with a sharp knife.
  9. Store in an airtight container in the refrigerator for up to 2 weeks.

Notes

Press the mixture firmly into the pan to prevent crumbling. For cleaner cuts, let bars sit at room temperature for 5 minutes after chilling. Different peanut butters may affect texture; adjust oat-to-wet-ingredient ratio if needed.
