  • 1/3 cup honey or maple syrup
  • 1 1/2 cups old-fashioned rolled oats
  • 1/3 cup vanilla or unflavored protein powder
  • 1/4 cup mini chocolate chips (optional)
  • 1 tablespoon ground flaxseed or chia seeds (optional)
  • Pinch of sea salt

Instructions

  1. Combine the wet ingredients. In a large mixing bowl, add 1 cup of creamy peanut butter and 1/3 cup of honey (or maple syrup). Stir them together with a rubber spatula until fully combined. If your peanut butter is cold, microwave it for about 15 seconds to soften.
  2. Add the dry ingredients. Pour in 1 1/2 cups of rolled oats, 1/3 cup of protein powder, and a pinch of sea salt. If using flaxseed or chia seeds, add them now. Stir until no dry spots remain. If too dry, add a tablespoon of peanut butter or honey; if too wet, add another tablespoon of oats.
  3. Fold in the chocolate chips. Gently stir in 1/4 cup of mini chocolate chips until evenly distributed. Use your hands if needed.
  4. Chill the dough (optional but helpful). If the dough feels too sticky, refrigerate for 15-20 minutes.
  5. Roll into balls. Using your hands or a small cookie scoop, portion out about 1 tablespoon of dough at a time and roll into smooth balls. Place on a parchment-lined baking sheet or plate. You should get about 18-20 balls.
  6. Chill to set. Refrigerate for at least 30 minutes to firm up.
  7. Store and enjoy. Transfer to an airtight container. Keep in the fridge for up to two weeks or freeze for up to three months.

Notes

If dough is too dry, add more peanut butter or honey. If too sticky, add more oats or protein powder. Wet your hands slightly before rolling to prevent sticking. For best texture, chill for at least 30 minutes. Flavors improve after a day in the fridge.
