This easy one-bowl banana bread requires no mixer and comes together in minutes. With simple ingredients and a fork, you can create a tender, moist loaf that’s perfect for breakfast, brunch, or a snack.

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/3 cup melted unsalted butter
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped walnuts, pecans, chocolate chips, or dried fruit

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line with parchment paper.
  2. Mash the bananas in a large mixing bowl with a fork until mostly smooth with a few lumps.
  3. Add melted butter, sugar, egg, and vanilla extract. Stir until well combined.
  4. Sprinkle flour, baking soda, and salt over the wet mixture. Fold gently with a spatula until just combined (do not overmix).
  5. Fold in optional mix-ins (e.g., walnuts, chocolate chips) with a few gentle strokes.
  6. Pour batter into prepared loaf pan and spread evenly.
  7. Bake for 55 to 65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil after 40 minutes if top browns too quickly.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter to avoid dense bread. Use room temperature ingredients for best results. Check for doneness at 50 minutes. Let cool completely before slicing to prevent crumbling.
