This easy one-bowl banana bread is tender, moist, and full of classic banana flavor. Made without a mixer, it’s a simple, forgiving recipe perfect for busy mornings or after-school snacks.

  • 3 ripe bananas, mashed (about 1 ½ cups or 340g)
  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (85g) chocolate chips, chopped walnuts, or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. Optionally, line with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add melted butter (cooled slightly), sugar, egg, and vanilla extract. Stir until well combined. The mixture will look slightly grainy.
  4. Sprinkle flour, baking soda, and salt over the wet mixture. Gently fold together until just combined. A few streaks of flour are okay; do not overmix.
  5. If using mix-ins (chocolate chips, nuts, or berries), gently fold them in with about 10 folds.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 55-65 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with aluminum foil after 40 minutes.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, use very ripe bananas with black spots. Do not overmix the batter to avoid tough bread. Let the bread cool completely before slicing for best texture. The bread is even better on day two as flavors meld.
