This easy one-bowl banana bread is proof that you don’t need a stand mixer or a complicated recipe to make something truly delicious. It’s simple, forgiving, and always delivers a moist, tender loaf that tastes like comfort.

  • 3 medium ripe bananas (very ripe with brown spots)
  • 1 ½ cups (180 grams) all-purpose flour
  • ¾ cup (150 grams) granulated sugar
  • ⅓ cup (75 grams) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon (optional but recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper for easy removal.
  2. In a large mixing bowl, add the 3 ripe bananas. Use a fork to mash them until they’re mostly smooth with a few small lumps remaining.
  3. To the mashed bananas, add the ⅓ cup melted butter, 2 room-temperature eggs, and 1 teaspoon vanilla extract. Stir with a wooden spoon or spatula until well combined.
  4. Pour in the ¾ cup granulated sugar and stir until fully incorporated.
  5. Sprinkle the 1 ½ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon salt, and 1 teaspoon ground cinnamon over the wet mixture. Stir gently until just combined. Do not overmix.
  6. Scrape the batter into the prepared loaf pan. Spread it evenly and tap the pan gently on the counter a couple of times to release air bubbles.
  7. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil.
  8. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment paper sling and transfer to a cooling rack. Cool completely before slicing, about 1 hour.

Use very ripe bananas for best flavor. Don’t overmix the batter. Measure flour correctly by spooning and leveling. Let cool completely before slicing. Room temperature eggs are important for even mixing.
