  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ¾ cup granulated sugar
  • ¼ cup packed brown sugar
  • 2 medium ripe bananas, mashed
  • 1 cup pumpkin puree (100% pure pumpkin)
  • 2 large eggs, room temperature
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ¼ cup milk (any kind)
  • Turbinado sugar for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth.
  3. Add the pumpkin puree, eggs, vegetable oil, vanilla extract, and milk to the mashed bananas. Whisk until smooth and well combined.
  4. Add both sugars to the wet mixture and whisk again until fully incorporated.
  5. In a separate small bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
  6. Add the dry ingredients to the wet ingredients all at once. Fold gently with a spatula or wooden spoon until just combined. Do not overmix.
  7. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle turbinado sugar on top if desired.
  8. Bake for 50 to 60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil after 40 minutes.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
  10. Slice and serve warm or at room temperature with butter or honey.

For best results, use very ripe bananas and room temperature ingredients. Do not overmix the batter. Let the bread cool completely before slicing to prevent crumbling. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
