This Easy Romantic Charcuterie Board for Two is the least stressful, most rewarding date night meal you can make. It requires almost no cooking, zero stress, and it forces you to sit down and actually be together.

Ingredients

Scale
  • 4 ounces Brie cheese
  • 4 ounces Sharp Cheddar cheese
  • 2 ounces Goat cheese log
  • 4 ounces Prosciutto
  • 4 ounces Salami (Genoa)
  • 1/2 cup Red grapes
  • 1 small Apple (Honeycrisp or Granny Smith)
  • 1/4 cup Dried apricots
  • 1/2 cup Mixed nuts (almonds, walnuts, or pecans)
  • 1/2 cup Crackers
  • 1 small Baguette
  • 2 tablespoons Honey
  • 2 tablespoons Fig jam or red pepper jelly
  • 1/4 cup Kalamata olives
  • Fresh rosemary sprigs (for garnish)

Instructions

  1. Prep the cheese (5 minutes): Take the brie out of the fridge and let it sit at room temperature for about 10 minutes. Slice the cheddar into thin, even triangles — about 1/4 inch thick. Place the goat cheese log on the board whole, or slice it into rounds if you prefer.
  2. Warm the brie (optional, 10 minutes): If you want that gooey, melty brie, place it in a small cast iron skillet or oven-safe dish. Drizzle it with a little honey and a pinch of flaky sea salt. Bake at 350°F (175°C) for 8-10 minutes, until it is soft and slightly puffed.
  3. Toast the baguette (5 minutes): Slice the baguette into 1/2 inch thick rounds. Toast them in the oven at 350°F (175°C) for about 5 minutes, or until they are lightly golden. You can also do this in a dry skillet over medium heat for 2-3 minutes per side.
  4. Arrange the board (5 minutes): Start by placing the small bowls or ramekins on the board — one for the honey, one for the jam, and one for the olives. Then, place the cheeses in different spots. Put the warm brie (if using) in its skillet right on the board.
  5. Add the meats: Fold the prosciutto slices into loose ribbons and place them near the brie. Fan the salami slices out in a row next to the cheddar.
  6. Fill in with fruits and crunch: Scatter the grapes and apple slices around the cheeses. Add the dried apricots in little clusters. Pour the nuts into any empty spaces. Arrange the crackers and toasted baguette slices in a neat line or a fan pattern.
  7. Garnish and serve: Tuck a few sprigs of fresh rosemary around the board for color and fragrance. Drizzle a little extra honey over the goat cheese if you like. Serve immediately, with extra napkins and a couple of small plates for each person.

Notes

For the best brie, look for one that feels slightly springy when you press it — that means it is ripe and ready. For the salami, I recommend Boar’s Head or Columbus for consistent quality. If you want to swap the prosciutto for something milder, try soppressata. And if you are feeding someone who doesn’t like goat cheese, just double up on the cheddar or brie. Easy!
