This creamy, tangy white chicken chili is a game day winner that comes together with minimal effort. Made with pantry-friendly ingredients and finished with cream cheese for a velvety texture, it’s a forgiving recipe that tastes like you planned it all along.

  • 2 (15-ounce) cans Great Northern beans or cannellini beans, drained and rinsed
  • 1 (16-ounce) jar salsa verde (such as Herdez or Frontera)
  • 2 cups low-sodium chicken broth
  • 1 cup frozen corn kernels (no need to thaw)
  • 1 medium white onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano (Mexican oregano preferred)
  • 1 teaspoon mild chili powder (or ancho chili powder)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 ounces cream cheese, softened and cut into cubes
  • Juice of 1 large lime
  • Optional toppings: fresh cilantro, sliced avocado, shredded Monterey Jack cheese, sour cream, tortilla chips, sliced jalapeños, hot sauce

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, drain and rinse the beans, measure out the spices, and cut the cream cheese into cubes.
  2. Layer the base: place the diced onion and minced garlic in the bottom of a 6-quart or larger slow cooker. Add the drained beans, frozen corn, and the entire jar of salsa verde. Pour in the chicken broth. Sprinkle the cumin, oregano, chili powder, salt, and pepper over everything. Stir gently to combine.
  3. Add the chicken: nestle the chicken breasts into the liquid, ensuring they are mostly submerged. Cover and cook on LOW for 6 hours or HIGH for 3 hours.
  4. Shred the chicken: remove the chicken breasts to a cutting board, let rest for 2-3 minutes, then shred with two forks. Alternatively, use a hand mixer on low speed directly in the slow cooker for about 10 seconds.
  5. Creamy finish: return the shredded chicken to the slow cooker. Add the cubed cream cheese and stir until melted and smooth, about 2-3 minutes.
  6. Final seasoning: squeeze the lime juice into the chili and stir. Taste and adjust salt, pepper, or heat level as desired.
  7. Rest and serve: let the chili sit on the warm setting for 10-15 minutes before serving. Ladle into bowls and top with desired garnishes.

Notes

For best results, use room temperature cream cheese to avoid lumps. If the chili is too thin, mash some beans against the side of the slow cooker and stir back in. If too thick, add a splash of broth. The chili tastes even better the next day. To make it spicier, add a diced jalapeño with the onions or stir in cayenne pepper. For a dairy-free version, omit cream cheese and stir in 1/2 cup full-fat coconut milk at the end.
