  • 8 oz cream cheese, softened
  • 1/2 lb sliced deli turkey
  • 1/4 cup shredded cheddar cheese (optional)
  • 1/2 cup fresh spinach leaves, stems removed
  • 1/4 cup finely diced red bell pepper
  • 2 tablespoons chopped fresh chives or green onions (optional)
  • Salt and black pepper, to taste
  • Optional: 1 teaspoon garlic powder, 1/2 teaspoon onion powder, squeeze of lemon juice, or dash of hot sauce

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 20 minutes before you start. If you forgot, microwave it in a bowl for 10-15 seconds until soft but not melted. Stir well.
  2. Mix the cream cheese spread: In a small bowl, combine the softened cream cheese with your seasonings (e.g., 1/2 teaspoon garlic powder, 1/4 teaspoon black pepper, pinch of salt). Stir until smooth. If adding chives or hot sauce, mix them in now. Taste and adjust seasoning.
  3. Prepare the tortillas: Lay one tortilla flat on your cutting board. If cold, warm in the microwave for 10 seconds to make pliable.
  4. Spread the cream cheese: Using a butter knife or offset spatula, spread an even layer of the cream cheese mixture over the entire surface of the tortilla, all the way to the edges.
  5. Layer the turkey: Place 3-4 slices of turkey flat on top of the cream cheese, overlapping slightly to cover the entire tortilla.
  6. Add the veggies: Sprinkle shredded cheddar cheese (if using) evenly over the turkey. Layer spinach leaves flat, then scatter diced red bell pepper and chives on top. Do not overstuff.
  7. Roll it up tight: Starting at the edge closest to you, roll the tortilla away from you as tightly as possible without tearing. Use fingers to tuck filling in as you go. Place seam-side down.
  8. Wrap and chill: Tightly wrap the rolled tortilla in plastic wrap or parchment paper, twisting the ends like a candy wrapper. Refrigerate for at least 30 minutes.
  9. Slice into pinwheels: Unwrap the chilled roll and place on a clean cutting board. Using a sharp serrated knife, slice into 1-inch thick rounds using a gentle sawing motion. You should get about 6-8 pinwheels per tortilla.
  10. Serve or pack: Arrange on a plate or pack directly into lunchboxes. If packing for later, layer between sheets of parchment paper.
