Instructions

  1. Pop the popcorn: Start with 8 cups of popped popcorn. If using microwave popcorn, pop one bag and pick out any unpopped kernels. If air-popping, use about 1/3 cup of kernels. Spread the popcorn on a large baking sheet lined with parchment paper and pick out any unpopped kernels.
  2. Melt the white chocolate: Fill a small saucepan with about an inch of water and bring to a gentle simmer. Place the white chocolate chips and 1 teaspoon of coconut oil in a heatproof bowl and set over the pot, ensuring the bottom of the bowl does not touch the water. Stir constantly until smooth and fully melted, about 3-4 minutes. Alternatively, microwave in 30-second bursts at 50% power, stirring well between each burst.
  3. Check the consistency: The chocolate should be smooth, glossy, and thin enough to drizzle. If it looks thick or clumpy, add another 1/2 teaspoon of coconut oil and stir.
  4. Drizzle and toss: Pour about half of the melted white chocolate over the popcorn in a large bowl. Use a spatula to gently fold the popcorn, lifting from the bottom to distribute the chocolate evenly. Add the remaining chocolate and continue folding until every kernel has a light coating. Do not overmix.
  5. Add the sprinkles: While the chocolate is still wet, sprinkle the Halloween sprinkles over the popcorn. Use your hands to gently toss and distribute them.
  6. Sprinkle with sea salt: Add a generous pinch of flaky sea salt over the top.
  7. Let it set: Spread the popcorn back onto the parchment-lined baking sheet in an even layer. Let sit at room temperature for about 30 minutes, or until the chocolate is completely set. For faster setting, refrigerate for 15 minutes in a single layer.
  8. Break into pieces: Once the chocolate is set, break the popcorn into bite-sized clusters.
