  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 large ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 medium red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small jalapeño, seeded and minced (optional)
  • Juice of 2 limes (about 3 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 small garlic clove, minced
  • Salt and black pepper to taste

Instructions

  1. Drain and rinse the black beans under cold water until water runs clear. Shake off excess water and set aside.
  2. Cut the avocado in half, remove the pit, and dice the flesh into small cubes. Place in a mixing bowl.
  3. Halve the cherry tomatoes, dice the red bell pepper, finely chop the red onion and cilantro, and mince the jalapeño if using. Add all to the bowl.
  4. In a small bowl, whisk together lime juice, olive oil, ground cumin, minced garlic, salt, and pepper.
  5. Pour the dressing over the beans, avocado, and veggies. Gently toss to combine, being careful not to mash the avocado.
  6. Cover and refrigerate for at least 30 minutes to let flavors meld.
  7. Before serving, stir gently and adjust seasoning with additional salt, pepper, or lime juice if desired.

Notes

Do not over-mix the avocado to keep creamy chunks intact. Use fresh lime juice for best flavor. Rinse canned beans well to remove excess sodium and metallic taste. Refrigerate for at least 30 minutes for flavors to meld. Adjust seasoning after chilling. Store leftovers in an airtight container for up to 2 days; avoid freezing.
