  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder

  • ¼ teaspoon cayenne pepper (optional, for extra heat)
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ½ cup milk (dairy, almond, oat, or soy)
  • ½ cup hot sauce (Frank’s RedHot recommended)
  • 2 tablespoons butter or coconut oil, melted
  • Fresh chopped parsley or chives for garnish (optional)
  • Ranch or blue cheese dressing for dipping (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash and dry the cauliflower thoroughly. Cut into bite-sized florets (about 1 to 1.5 inches each). Pat dry with a clean kitchen towel or paper towels.
  3. In a medium bowl, whisk together the all-purpose flour, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and black pepper.
  4. In a separate bowl, pour in the milk. Slowly add the dry flour mixture to the milk, whisking constantly until you have a smooth, lump-free batter. It should be thick enough to coat the back of a spoon but still pourable.
  5. Add the dry cauliflower florets to the batter. Use tongs or your hands to toss and coat each floret evenly. Let any excess batter drip off before placing the florets on the prepared baking sheet in a single layer with space between each.
  6. Bake for 20-22 minutes: bake for 10 minutes, then carefully flip each floret using tongs. Bake for another 10-12 minutes, until golden brown and crispy.
  7. While the cauliflower bakes, combine the hot sauce and melted butter (or coconut oil) in a small saucepan over low heat. Stir until fully incorporated and warm. Alternatively, microwave for 30 seconds and stir.
  8. Once the cauliflower is done, remove from oven. Brush the buffalo sauce onto each floret, or transfer to a large bowl and drizzle sauce over the top. Gently toss until every piece is coated.
  9. Optional: For extra crispiness, return the sauced cauliflower to the baking sheet and broil on high for 1-2 minutes, watching closely.
  10. Serve immediately, sprinkled with fresh parsley or chives, with ranch or blue cheese dressing on the side.

Notes

Dry the cauliflower thoroughly for maximum crispiness. Don’t overcrowd the baking sheet. For extra crispiness, use a wire rack on the baking sheet. Watch the broiler closely to prevent burning. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in oven or air fryer.
