  • 3 large apples (Fuji or Honeycrisp preferred)
  • 1 teaspoon ground cinnamon (Ceylon cinnamon recommended)
  • 1 tablespoon maple syrup or honey (optional)
  • 1 tablespoon lemon juice
  • 1 cup plain Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 12 teaspoons honey or maple syrup (for dip)
  • A pinch of ground cinnamon (for dip)

Instructions

  1. Preheat your oven to 200°F (93°C). Line two baking sheets with parchment paper or silicone mats.
  2. Wash and core the apples. Slice them very thinly (about 1/8 inch or 3 mm) using a mandoline slicer or sharp knife.
  3. In a large bowl, toss the apple slices with lemon juice to prevent browning. Drizzle maple syrup (if using) and sprinkle cinnamon evenly. Toss gently to coat.
  4. Arrange the apple slices in a single layer on the prepared baking sheets, ensuring they do not overlap.
  5. Bake for 1 hour, then carefully flip each slice and rotate the trays. Continue baking for another 45-60 minutes until dry and crisp, watching closely during the last 15 minutes to prevent burning.
  6. Remove from oven and transfer chips to a cooling rack to crisp further. Return to oven for a few minutes if some chips remain soft.
  7. While apples bake, combine Greek yogurt, vanilla extract, honey or maple syrup, and a pinch of cinnamon in a small bowl. Stir well and chill until serving.
  8. Serve apple chips with the creamy Greek yogurt dip immediately or store chips in an airtight container at room temperature and dip in the fridge.

Notes

Keep an eye on baking time as ovens vary; flipping halfway ensures even crispness. Use fresh cinnamon for best flavor. Chips can be reheated briefly in a low oven to restore crispness. For dairy-free dip, substitute Greek yogurt with coconut yogurt.
