  • 1 cup small-curd cottage cheese
  • ½ cup shredded cheddar cheese
  • 1 cup fresh spinach, chopped
  • 2 green onions, sliced
  • ½ teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil or nonstick spray for greasing muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with olive oil or nonstick spray.
  2. Crack 6 large eggs into a mixing bowl and whisk until yolks and whites are fully combined and slightly frothy, about 1-2 minutes.
  3. Stir in 1 cup of small-curd cottage cheese gently to combine.
  4. Add ½ cup shredded cheddar cheese and mix until evenly distributed.
  5. Fold in 1 cup chopped fresh spinach, 2 sliced green onions, ½ teaspoon garlic powder, salt, and black pepper carefully to avoid wilting the spinach too much.
  6. Spoon the mixture evenly into the prepared muffin cups, filling each about ¾ full.
  7. Bake for 20-25 minutes until tops are set and slightly golden, and a toothpick inserted in the center comes out clean.
  8. Let the egg bites rest for 5 minutes before removing from the muffin tin.

Notes

Bring eggs to room temperature before mixing for better texture. If tops brown too quickly, tent with foil halfway through baking. Avoid overfilling muffin cups to prevent spillover. Use small-curd cottage cheese for creamier texture. Variations include adding diced bell peppers, mushrooms, jalapeños, or swapping cheddar for goat cheese. For dairy-free, substitute cottage cheese with blended silken tofu and vegan cheese.
