These Healthy Pumpkin Oat Greek Yogurt Muffins are soft, tender, and actually taste like a treat. They have a perfect domed top, a moist crumb, and a warmth from the pumpkin and spices that feels like a hug.

  • 1 cup (120g) whole wheat flour or all-purpose flour
  • 1 cup (100g) old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup (245g) canned pumpkin puree
  • 1/2 cup (120g) plain Greek yogurt
  • 2 large eggs
  • 1/3 cup (80ml) maple syrup or honey
  • 1 teaspoon vanilla extract
  • Optional mix-ins: 1/2 cup (80g) dark chocolate chips, 1/2 cup (60g) chopped walnuts, or 1/4 cup (40g) dried cranberries

Instructions

  1. Preheat your oven to 375°F (190°C). Line your muffin tin with 10 to 12 paper liners.
  2. In a large bowl, whisk together the whole wheat flour, rolled oats, baking powder, baking soda, pumpkin pie spice, and salt for about 20 seconds.
  3. In a separate, medium bowl, whisk together the pumpkin puree, Greek yogurt, eggs, maple syrup, and vanilla extract until completely smooth.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Using a rubber spatula, fold the mixture together gently until no streaks of dry flour remain. A few small lumps are fine.
  5. If using mix-ins, gently fold them in at the very end.
  6. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full for standard muffins or all the way to the top for jumbo domed tops.
  7. Bake for 18 to 22 minutes, until golden brown on top and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the muffins cool in the pan for 5 to 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not use instant oats; rolled oats are essential for structure. Room temperature ingredients help create a tender texture. Letting the batter rest for 10 minutes before baking allows oats to absorb moisture for a more tender muffin. Over-mixing will result in tough muffins.
