Homemade Christmas Cake Pops with White Chocolate Drizzle

These homemade Christmas cake pops feature a tender vanilla cake center coated in a silky white chocolate shell with festive sprinkles. They’re the perfect cozy treat for holiday gatherings, gift boxes, or a snowy afternoon project.

  • 1 ½ cups all-purpose flour (spooned and leveled)
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs, room temperature
  • ½ cup whole milk
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • ¼ cup cream cheese frosting
  • 12 ounces high-quality white chocolate, chopped
  • 1 tablespoon coconut oil or shortening
  • Festive sprinkles (red, green, and gold)
  • Pinch of sea salt
  • 2024 lollipop sticks

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan and line with parchment paper.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy, about 3-4 minutes. Add eggs one at a time, beating well after each. Stir in vanilla and almond extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet mixture, alternating with milk, starting and ending with flour mixture. Mix until just combined.
  4. Pour batter into prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack.
  5. Once cake is completely cool, break into chunks and crumble into fine crumbs in a large bowl (like wet sand).
  6. Add ¼ cup cream cheese frosting to crumbled cake and mix with hands until mixture holds together when squeezed (play-dough consistency). Add more frosting or crumbs if needed.
  7. Scoop about 1 ½ tablespoons of mixture and roll into smooth balls. Place on parchment-lined baking sheet. Refrigerate for at least 30 minutes.
  8. While balls chill, finely chop white chocolate. Place in a heatproof bowl with coconut oil. Melt over a double boiler or in microwave in 20-second bursts, stirring after each, until smooth and slightly runny.
  9. Remove chilled balls from fridge. Dip tip of lollipop stick into melted chocolate, then insert about halfway into a cake ball. Dip entire ball into melted chocolate, tapping stick gently on bowl edge to let excess drip off. Do not swirl.
  10. While chocolate is still wet, sprinkle with festive decorations. Place pop upright in Styrofoam block to dry. Repeat with all pops.
  11. Once all pops are dipped and set (about 15 minutes), melt a small amount of additional white chocolate. Drizzle over pops using a fork or piping bag. Sprinkle a tiny pinch of sea salt on top. Let set completely.

Notes

Chill cake balls thoroughly before dipping to prevent cracking. Add a pinch of sea salt to white chocolate to balance sweetness. Work in batches of 4-5 to keep balls cold. For best results, let pops sit overnight for flavor development.
