These homemade elderberry immune-boosting gummies are a simple, delicious way to support your family’s health during cold season. Made with just dried elderberries, raw honey, and gelatin, they’re a fun and effective alternative to store-bought supplements.

Ingredients

Scale
  • ½ cup dried elderberries
  • 3 cups filtered water
  • ¼ cup raw honey (plus more to taste)
  • 3 tablespoons grass-fed gelatin
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Simmer the elderberries: In a small saucepan, combine the dried elderberries and 3 cups of filtered water. Bring to a boil over medium-high heat, then reduce to a gentle simmer. Let it bubble away for about 20 minutes—the liquid should reduce by about half. You’ll know it’s ready when the berries have plumped up and the liquid is a deep, dark purple. Don’t boil it too hard or you’ll concentrate the bitterness.
  2. Strain the concentrate: Place your fine-mesh strainer over a glass measuring cup or bowl. Carefully pour the elderberry mixture through the strainer, pressing on the berries with the back of a spoon to extract every last drop of goodness. Discard the berries (or compost them). You should have about 1½ cups of concentrated elderberry liquid. Let it cool for 5 minutes—it should be warm, not hot.
  3. Bloom the gelatin: While the liquid cools slightly, pour ½ cup of the warm elderberry concentrate into a small bowl. Sprinkle the gelatin evenly over the surface. Don’t stir yet—just let it sit for 5 minutes. This step is crucial for avoiding lumps.
  4. Combine and dissolve: After 5 minutes, whisk the gelatin mixture gently until it’s completely smooth and dissolved. It should look like a thick, glossy syrup. If you see any lumps, place the bowl over a pan of simmering water (double boiler style) and whisk until smooth.
  5. Add honey and lemon: Pour the bloomed gelatin mixture back into the remaining warm elderberry concentrate. Add the raw honey and lemon juice (if using). Whisk until everything is fully incorporated. Taste it—it should be sweet with a pleasant tang. Adjust honey if needed.
  6. Fill the molds: Using a dropper or a small measuring spoon, carefully fill your silicone molds. Work quickly because the mixture will start to set as it cools. If it thickens too much, place the bowl in a warm water bath for a minute to loosen it up.
  7. Set in the fridge: Place the filled molds on a small baking sheet (for stability) and refrigerate for at least 2 hours, or until firm. They should pop out of the molds easily—if they stick, pop them in the freezer for 5 minutes.
  8. Store properly: Transfer the gummies to an airtight glass jar and keep them in the refrigerator. They’ll stay fresh for up to 2 weeks—if they last that long.

Notes

Don’t boil the gelatin directly as high heat destroys its gelling power. Test the set before filling all molds by spooning a tiny bit onto a cold plate and refrigerating for 2 minutes. Keep molds stable on a baking sheet. Use a dropper for precision filling. Don’t skip the lemon juice as it helps preserve the gummies and keeps the color vibrant. For a vegan version, substitute gelatin with 2 teaspoons of agar agar powder. For spiced gummies, add a cinnamon stick, 3 whole cloves, and a slice of fresh ginger while simmering. For lower sugar, reduce honey to 2 tablespoons and add 1 tablespoon monk fruit sweetener. Gummies are best within the first 7 days and can be frozen for up to 3 months.
