Ingredients

Scale
  • 1 head of broccoli, cut into florets (about 3 cups)
  • 1 head of cauliflower, cut into florets (about 3 cups)
  • 2 bell peppers (any color), sliced into strips
  • 1 medium red onion, cut into wedges
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 packet ranch seasoning mix (or 3 tablespoons homemade ranch seasoning)
  • 1 tablespoon fresh chives, chopped (optional)
  • 1 tablespoon fresh dill, chopped (optional)
  • Green food coloring (a few drops)
  • 1/4 cup milk
  • Edible eyeballs (optional, for garnish)
  • Pretzel sticks (optional, for garnish)
  • Black sesame seeds (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Wash and dry all vegetables thoroughly. Cut broccoli and cauliflower into bite-sized florets (1-2 inches). Slice bell peppers into 1/2-inch strips. Cut red onion into 1-inch wedges.
  2. Place all chopped vegetables on a large baking sheet. Drizzle with olive oil, then sprinkle with minced garlic, salt, black pepper, and garlic powder (if using). Toss to coat evenly. Spread in a single layer; use two sheets if needed.
  3. Roast for 20-25 minutes, flipping halfway through, until edges are browned and crispy and vegetables are tender.
  4. While vegetables roast, make the dip: In a small bowl, combine sour cream, mayonnaise, and ranch seasoning. Whisk until smooth. Stir in chives and dill (if using). Add milk a little at a time until desired consistency. Add 3-4 drops green food coloring and stir until evenly colored.
  5. Let roasted vegetables cool on the baking sheet for 5 minutes. Transfer to a serving platter. Place dip in a small bowl in the center. Garnish with edible eyeballs, pretzel sticks, or black sesame seeds if desired.

Notes

For best results, do not crowd the pan; use two sheets if necessary. Flip vegetables halfway through roasting. The dip can be made ahead and tastes even better after a day in the fridge. Let vegetables cool for 5-10 minutes before serving to enhance crispiness.
