These turkey pinwheel wraps are a game-changer for busy families. They come together in under 15 minutes, hold up beautifully in a lunchbox, and kids actually ask for them.

  • 8 oz cream cheese, softened
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup finely chopped broccoli florets
  • 810 slices deli turkey breast
  • 46 leaves of lettuce

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 15 minutes before you start. You want it soft enough to spread easily but not so soft that it’s runny. If you forget, you can microwave it for 10-15 seconds, but watch it carefully.
  2. Mix the spread: In a small bowl, combine the softened cream cheese and the ranch seasoning mix. Stir until everything is well combined. It should look smooth and creamy.
  3. Prep the veggies: Finely chop the broccoli florets into tiny pieces, smaller than a pea. Pat any wet veggies dry with a paper towel.
  4. Lay out the tortilla: Place one tortilla on a clean cutting board. Using a rubber spatula, spread an even layer of the cream cheese mixture over the entire surface of the tortilla, leaving about a half-inch border around the edges.
  5. Add the fillings: Sprinkle the shredded cheddar cheese evenly over the cream cheese. Then add the chopped broccoli. Lay the turkey slices flat on top, overlapping them slightly. Finally, place the lettuce leaves on top, pressing them down gently.
  6. Roll it up tight: Starting at one end, roll the tortilla as tightly as you can without tearing it. Use your fingers to tuck the filling in as you go. When you reach the end, place the roll seam-side down.
  7. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap or parchment paper. Twist the ends to seal. Place it in the fridge for at least 30 minutes (or up to overnight).
  8. Slice into pinwheels: Once chilled, unwrap the roll and place it on the cutting board. Using a sharp serrated knife, slice the roll into 1-inch pieces. You should get about 8-10 pinwheels per tortilla.
  9. Pack and serve: Arrange the pinwheels in a lunchbox or on a plate. If you’re packing for later, use a toothpick to secure each one. They’re best served cold or at room temperature.

Notes

The cream cheese temperature trick is non-negotiable. Cold cream cheese will tear your tortilla. Patting the lettuce dry prevents sogginess. Chilling time matters for clean slices. Make these the night before for easier mornings.
