Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter, for browning
  • 1 1/2 cups roughly chopped pecans
  • 3/4 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon flaky sea salt
  • 1/4 cup unsweetened applesauce
  • 1 cup all-purpose flour, spooned and leveled
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk (2% or whole)
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar

Instructions

  1. Preheat oven to 350°F (175°C). Place an 8×8-inch baking dish in the oven to warm.
  2. Brown the butter: In a small saucepan over medium heat, melt the butter, stirring constantly with a whisk. Cook until it foams, then settles, and amber specks appear at the bottom (about 5-7 minutes). Immediately pour into a heat-safe bowl and let cool for 5 minutes.
  3. Make the filling: In a medium bowl, whisk together brown sugar, egg, vanilla, salt, and applesauce until smooth. Slowly drizzle in the warm brown butter while whisking. Stir in chopped pecans.
  4. Prepare the topping: In a small bowl, whisk together flour, baking powder, salt, and granulated sugar. Add milk and melted butter, stirring until just combined (a few lumps are fine).
  5. Assemble: Carefully remove the hot baking dish from the oven. Pour the pecan filling into the dish. Drop spoonfuls of the topping batter over the filling, leaving some filling exposed.
  6. Bake on the middle rack for 35-40 minutes, until the topping is golden brown and a toothpick inserted into the topping comes out clean. If browning too fast, tent with foil for the last 10 minutes.
  7. Cool on a wire rack for at least 20 minutes before serving. For a crisper top, let it sit uncovered for the last 10 minutes of cooling.

Notes

Brown butter is essential for the nutty flavor. Do not skip preheating the baking dish. Let the cobbler cool for at least 20 minutes to set the filling. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use vegan butter, flax egg, and oat milk.
