Ingredients

Scale
  • 12 Hawaiian sweet rolls (1 package)
  • 1 pound cooked turkey breast, thinly sliced or shredded
  • 1/2 cup whole berry cranberry sauce
  • 1/2 cup plain Greek yogurt (2% or full fat)
  • 1 tablespoon prepared horseradish
  • 1 tablespoon Dijon mustard
  • 1/2 cup shredded sharp cheddar cheese
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 tablespoon poppy seeds (optional)
  • Salt and black pepper to taste
  • Fresh arugula or baby spinach (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Make the yogurt spread: In a small bowl, combine 1/2 cup Greek yogurt, 1 tablespoon horseradish, and 1 tablespoon Dijon mustard. Stir until smooth. Add a pinch of salt and black pepper. Set aside.
  3. Prepare the garlic oil: In another small bowl, mix 2 tablespoons olive oil with 1 minced garlic clove. Let it sit while you assemble.
  4. Slice the rolls: Without separating the individual rolls, use a serrated knife to slice the whole slab of 12 rolls horizontally through the middle. Place the bottom half in the prepared baking dish, cut side up.
  5. Spread the yogurt mixture evenly over the cut side of the bottom rolls.
  6. Layer the turkey: Arrange sliced or shredded turkey evenly over the yogurt spread.
  7. Add the cranberry sauce: Spoon the cranberry sauce over the turkey in small dollops, then gently spread into ribbons.
  8. Sprinkle the cheese evenly over the cranberry layer.
  9. Add greens if using: Lay a few arugula or spinach leaves over the cheese.
  10. Place the top half of the rolls over the filling, cut side down. Press down gently.
  11. Brush the tops with the garlic oil mixture. Sprinkle poppy seeds on top if using. Add a tiny pinch of salt.
  12. Cover with foil and bake for 15 minutes. Remove foil and bake for another 5-7 minutes, until tops are golden and cheese is bubbly.
  13. Let them rest for 5 minutes before slicing. Use a sharp knife to cut between the rolls. Serve warm.

Notes

Don’t over-bake the uncovered portion; watch closely during final minutes. Let sliders rest 5 minutes before slicing for better structure. For make-ahead: assemble completely, cover, and refrigerate up to 24 hours before baking, adding 5 minutes to covered baking time.
