  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 3 cups low-sodium chicken broth
  • 1 cup water
  • 12 ounces dried pasta (fettuccine, linguine, or penne)
  • 1 cup freshly grated Parmesan cheese (preferably Parmigiano-Reggiano)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, and garlic powder.
  2. Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat until shimmering. Add chicken in a single layer (work in batches if needed) and cook without moving for 5-6 minutes until deep golden brown. Flip and cook another 4-5 minutes until cooked through (165°F internal temperature). Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add butter to the same pot. Once melted and foamy, add minced garlic and stir constantly for about 1 minute until fragrant and just starting to turn golden. Do not burn.
  4. Pour in heavy cream, chicken broth, and water. Stir, scraping up browned bits from the bottom. Bring to a gentle boil, then reduce to a steady simmer.
  5. Add dried pasta, pushing it down to mostly submerge. Cook, stirring frequently, for 10-12 minutes until al dente. If liquid becomes too thick before pasta is done, add a splash of warm water or broth.
  6. While pasta cooks, shred or chop the chicken into bite-sized pieces.
  7. Once pasta is al dente, reduce heat to low. Add shredded chicken and freshly grated Parmesan. Stir gently until cheese melts and sauce becomes silky, about 2 minutes. Taste and adjust seasoning.
  8. Remove from heat. Stir in red pepper flakes (if using) and sprinkle with fresh parsley. Let rest 2-3 minutes before serving. Serve hot with extra Parmesan.

For best results, use freshly grated Parmesan (not pre-shredded) to avoid a grainy sauce. Keep heat at a gentle simmer after adding cream to prevent curdling. Stir pasta frequently to prevent sticking and help release starch for a naturally thickened sauce. Leftovers keep in the refrigerator for up to 4 days; reheat with a splash of milk or broth.
