Instructions

  1. Activate the yeast: In the bowl of a stand mixer, combine warm water, 2 tablespoons brown sugar, and active dry yeast. Stir and let sit for 5 minutes until foamy.
  2. Mix the dough: Add pumpkin puree, melted butter, salt, and 2 cups bread flour to the yeast mixture. Mix on low until combined, then add remaining flour ½ cup at a time. Knead on medium speed for 8 minutes until dough is smooth, slightly tacky, and pulls away from the bowl.
  3. First rise: Shape dough into a ball and place in a lightly oiled bowl. Cover and let rise in a warm spot for 1 hour until doubled in size.
  4. Shape the bagels: Punch down dough and divide into 8 equal pieces. Roll each into a ball, then poke a hole through the center and stretch to about 1 ½ inches in diameter. Place on a parchment-lined baking sheet, cover, and rest for 10 minutes.
  5. Boil the bagels: Bring 8 cups water to a boil in a wide pot. Add baking soda and 1 tablespoon brown sugar. Boil 2-3 bagels at a time for 30 seconds per side. Transfer back to the parchment-lined sheet.
  6. Apply the toppings: While still warm and damp, brush each bagel with melted butter. Mix granulated sugar and cinnamon in a shallow bowl. Dip each bagel into the mixture, coating both sides and edges.
