  • 3/4 cup brown sugar, packed
  • 1/3 cup maple syrup

  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt, plus a pinch for sprinkling
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel sweet potatoes and slice into even 1/4-inch rounds. Place slices in a bowl of cold water to remove starch; drain and pat dry.
  3. In a medium bowl, whisk together melted butter, brown sugar, maple syrup, cinnamon, nutmeg, vanilla, and 1/4 teaspoon salt until smooth.
  4. Arrange sweet potato slices in a 9×13-inch baking dish in overlapping layers. Pour glaze evenly over the top, using a spatula to coat each slice.
  5. Cover dish tightly with aluminum foil and bake for 30 minutes.
  6. Remove foil, baste sweet potatoes with glaze from the bottom of the dish, and bake uncovered for 20-25 minutes until fork-tender and glaze is bubbly. For extra caramelization, broil for 2-3 minutes at the end.
  7. Let rest for 5 minutes before serving. Spoon extra glaze over the top and sprinkle with nuts if desired.
