Ingredients

Scale
  • 2 lbs (900g) ground beef (80/20 blend)
  • 12 slider buns (e.g., King’s Hawaiian rolls)
  • 68 slices American cheese
  • 4 tablespoons (56g) unsalted butter, melted
  • 2 tablespoons (30ml) Dijon mustard
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon sesame seeds (optional)
  • 1 teaspoon poppy seeds (optional)
  • Optional toppings: pickle slices, shredded lettuce, sliced tomatoes, ketchup, special sauce

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving overhang on the sides.
  2. In a large mixing bowl, combine ground beef, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Mix gently with your hands until just combined—do not overwork.
  3. Transfer seasoned beef to the prepared dish and press into an even layer, about ½ inch (1.25 cm) thick, reaching all corners.
  4. Bake for 20-25 minutes, until internal temperature reaches 160°F (71°C) for well-done. Drain excess grease with a paper towel. Let rest 5 minutes.
  5. Cut the beef slab into 12 equal squares (3 lengthwise strips, then 4 crosswise strips).
  6. Slice the slab of slider buns in half horizontally. Place bottom half in a clean 9×13-inch dish or lined baking sheet.
  7. Place beef patties evenly on bottom buns. Top each with half a slice of cheese (or a full slice). Place top buns over cheese.
  8. In a small bowl, whisk melted butter and Dijon mustard. Brush mixture generously over top buns. Sprinkle with sesame seeds and poppy seeds.
  9. Bake assembled sliders for 10-12 minutes, until cheese is melted and buns are golden. Tent with foil if browning too quickly.
  10. Let rest 5 minutes before separating. Serve warm.

Notes

For extra-crispy bottoms, place assembled sliders on a wire rack set inside the baking sheet during the final bake. Toasting the buns before assembling prevents sogginess. Let sliders rest 5 minutes after baking to allow cheese to set.
