A quick and easy no-bake layered cheesecake trifle featuring patriotic red, white, and blue colors with fresh berries, creamy cheesecake filling, and crunchy graham crackers. Perfect for 4th of July and other festive occasions.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream, cold
  • 1 tsp vanilla extract
  • 1 ½ cups fresh strawberries, hulled and sliced
  • 1 ½ cups fresh blueberries
  • 2 cups graham crackers, roughly crushed
  • Optional: fresh mint leaves for garnish
  • Optional: extra whole berries for garnish

Instructions

  1. In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy (about 2-3 minutes). Add powdered sugar and vanilla extract, and continue beating until well combined.
  2. In a separate chilled bowl, whip the cold heavy cream until stiff peaks form (about 3-5 minutes). Be careful not to overwhip.
  3. Gently fold the whipped cream into the cream cheese mixture using a spatula, folding slowly to maintain airy texture.
  4. Rinse the strawberries and blueberries thoroughly. Hull and slice the strawberries. Pat berries dry with paper towels.
  5. Place graham crackers in a zip-top bag and crush with a rolling pin or pulse briefly in a food processor to get a mix of crumbs and chunks.
  6. Assemble the trifle by layering: start with 1 cup crushed graham crackers at the bottom, then 1 cup cheesecake filling, followed by ½ cup sliced strawberries, another graham cracker layer, repeat layers, finishing with blueberries on top.
  7. Cover the trifle with plastic wrap and refrigerate for at least 3 hours, preferably overnight.
  8. Before serving, garnish with fresh mint leaves and extra whole berries. Serve chilled.

Notes

Use cold heavy cream for better whipping. Fold whipped cream gently into cream cheese mixture to keep it light and fluffy. Chill at least 3 hours or overnight for best texture. If cheesecake filling is too stiff, add a splash of milk to loosen. Drain excess juice from berries if very juicy to avoid soggy layers. Graham crackers can be toasted lightly under broiler for extra flavor. For gluten-free, use gluten-free crackers; for vegan, use dairy-free cream cheese and coconut cream.
