  • 1 whole wheel Brie cheese (about 8 oz / 225 g), room temperature
  • 2 medium ripe pears (Bosc or Anjou), peeled and thinly sliced
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground cloves
  • Pinch of nutmeg
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon unsalted butter
  • ½ cup walnut halves, toasted
  • 2 tablespoons brown sugar (for candied walnuts)
  • 1 tablespoon water
  • 1 tablespoon honey
  • A few sprigs fresh thyme
  • Crackers or baguette slices for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and thinly slice 2 medium pears. Heat 1 tablespoon unsalted butter in a non-stick skillet over medium heat. Add pears, 2 tablespoons brown sugar, ½ teaspoon cinnamon, ⅛ teaspoon ground cloves, and a pinch of nutmeg. Sauté gently for 5-7 minutes until pears are tender but still hold shape, stirring occasionally. Remove from heat and set aside to cool slightly.
  3. In the same skillet, toast ½ cup walnut halves over medium heat for about 2 minutes, stirring frequently to prevent burning. Add 2 tablespoons brown sugar and 1 tablespoon water, stirring until sugar dissolves and coats the walnuts in a sticky glaze. Transfer walnuts to parchment paper to cool and separate.
  4. Place the brie wheel in your chosen oven-safe dish. Optionally, score the top lightly with a knife to help flavors penetrate.
  5. Spread the spiced pears evenly over the top of the brie. Scatter candied walnuts on top of the pears, distributing evenly.
  6. Bake in the oven for 15-18 minutes, or until the brie is soft and just starting to ooze but still holding shape.
  7. Remove from oven and drizzle 1 tablespoon honey over the warm brie. Garnish with fresh thyme sprigs.
  8. Serve immediately with crackers or sliced baguette.

Notes

Use room temperature brie for even melting. Watch the brie closely near the end of baking to avoid over-melting. Pears and walnuts can be prepared ahead and assembled just before baking. For dairy-free, use vegan brie and coconut oil instead of butter, and maple syrup instead of honey. Serve warm immediately for best texture and flavor.
