  • 1/4 cup sour cream (for web design)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge at least 1 hour before starting, or microwave in 10-second bursts until soft but not hot.
  2. Mix the cheese ball base: In a large bowl, combine softened cream cheese, shredded cheddar, 1/4 cup sour cream, garlic powder, onion powder, smoked paprika, black pepper, and salt. Beat with a hand mixer on medium speed until smooth and well combined, about 2-3 minutes.
  3. Shape the cheese ball: Place mixture on a large piece of plastic wrap. Gather edges and twist to shape into a smooth round ball. Refrigerate for at least 2 hours, or up to 2 days.
  4. Prepare the web mixture: About 15 minutes before decorating, mix 1/4 cup sour cream with 1 tablespoon milk until smooth. Consistency should be like thick pancake batter.
  5. Apply the first layer: Unwrap chilled cheese ball and place on serving platter. Smooth surface with a small offset spatula or butter knife. Spread a thin, even layer of sour cream mixture over the entire surface.
  6. Create the web lines: Using a toothpick, gently drag through sour cream layer to create lines. Start at top center and drag straight down to bottom. Repeat to create 8 evenly spaced radiating lines. Then, starting about 1 inch from top, drag toothpick in curved lines across surface, connecting vertical lines. Continue until bottom is reached.
  7. Add the spider (optional): Use black sesame seeds or poppy seeds for body, and thin pretzel sticks or chive pieces for legs. Or use an olive slice for the body.
  8. Chill again: Place decorated cheese ball back in fridge for at least 30 minutes to set the sour cream layer.
  9. Serve: Arrange crackers and veggies around cheese ball. Let sit at room temperature for 15 minutes before serving to soften slightly.

Temperature is key: cream cheese should be softened but not warm. Don’t skip the chilling steps—they ensure the cheese ball holds its shape and the web design stays crisp.
