A creamy, nutty, and protein-packed overnight oats recipe that comes together in just 5 minutes. Perfect for busy mornings, this no-cook breakfast is made with rolled oats, peanut butter, and Greek yogurt for a satisfying, pudding-like texture.

  • 1/2 cup (45g) rolled oats
  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) peanut butter (natural, no added sugar)
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the dry ingredients: In a mason jar or airtight container, add rolled oats, chia seeds, protein powder, and a pinch of salt. Stir to break up any clumps.
  2. Add the wet ingredients: Pour in milk, Greek yogurt, peanut butter, maple syrup or honey, and vanilla extract.
  3. Stir vigorously until everything is well combined. The peanut butter should be fully incorporated, and the protein powder dissolved. The mixture should be uniform and slightly thick.
  4. Seal the jar tightly and refrigerate for at least 6 hours, preferably overnight.
  5. The next morning, stir the oats. If too thick, add a splash of milk. Add desired toppings (e.g., extra peanut butter, chocolate chips, sliced banana, honey) and enjoy cold or microwave for 30-45 seconds if preferred.

Notes

For best texture, use rolled oats (not quick oats). Stir the mixture again after 30 minutes in the fridge to ensure even distribution. Toppings like extra peanut butter, chocolate chips, sliced banana, or a drizzle of honey enhance the flavor. The oats keep in the fridge for up to 4 days. Do not freeze.
