  • 2 medium honeynut squash (about 2 pounds total), peeled, seeded, and cut into 1-inch cubes
  • 1 large yellow onion, diced
  • 3 to 4 garlic cloves, smashed and roughly chopped
  • 3 cups vegetable broth (low-sodium preferred)
  • ½ cup heavy cream
  • ⅓ cup raw pumpkin seeds (pepitas)
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon maple syrup (optional, if squash is not sweet enough)

Instructions

  1. Prep the squash: Cut each honeynut squash in half lengthwise. Scoop out seeds and stringy bits. Peel each half with a vegetable peeler, then cut into 1-inch cubes. You should have about 4 to 5 cups of cubed squash.
  2. Toast the pepitas: Heat a small skillet over medium heat. Add pepitas in a single layer. Cook, shaking the pan frequently, until they start to pop and turn golden brown, about 2 to 3 minutes. Transfer to a small bowl and sprinkle with a pinch of salt. Set aside.
  3. Sauté the aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and cook until translucent and softened, about 3 to 4 minutes. Add smashed garlic and cook for another minute until fragrant.
  4. Cook the squash: Add cubed squash, vegetable broth, salt, pepper, and cinnamon to the pot. Stir to combine. Bring to a boil over high heat, then reduce to a simmer. Cover and cook until squash is fork-tender, about 10 to 12 minutes.
  5. Blend until velvety: Remove pot from heat. Use an immersion blender to blend until completely smooth. (Alternatively, let cool 5 minutes, then blend in batches in a regular blender, filling no more than halfway.)
  6. Finish with cream: Stir in heavy cream until fully incorporated. Taste and adjust seasoning, adding more salt or maple syrup if needed. If soup is too thick, stir in a splash more broth or water.
  7. Serve: Ladle soup into bowls. Top with toasted pepitas and a swirl of extra cream if desired. Serve immediately.

Notes

For a vegan version, swap heavy cream for full-fat coconut milk or cashew cream. For a spicy version, add a minced jalapeño or ½ teaspoon red pepper flakes. To make ahead, prepare soup without pepitas; store pepitas separately and add just before serving. Soup keeps in the refrigerator for up to 5 days and freezes for up to 3 months.
