Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 medium zucchinis, sliced into half-moons
  • 4 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse and pat dry the shrimp thoroughly. Slice the zucchinis into 1/4-inch thick half-moons. Mince the garlic and zest the lemon, then squeeze the juice, removing any seeds.
  2. Heat a large skillet over medium-high heat. Add olive oil and butter, letting the butter melt and foam without browning.
  3. Add minced garlic and red pepper flakes (if using). Stir constantly for about 1 minute until fragrant and golden.
  4. Add shrimp in a single layer. Cook undisturbed for about 2 minutes until pink and slightly opaque on one side, then flip and cook another 1-2 minutes. Add a splash of olive oil if pan looks dry.
  5. Remove shrimp to a plate to prevent overcooking.
  6. Add zucchini slices to the same pan. Season lightly with salt and pepper. Cook, stirring occasionally, for 4-5 minutes until tender but still slightly crisp.
  7. Return shrimp to the pan. Add lemon zest and juice. Toss everything together to coat well. Adjust salt and pepper to taste.
  8. Garnish with chopped fresh parsley before serving.

Notes

Dry shrimp thoroughly before cooking to ensure a good sear. Avoid overcooking shrimp to keep them tender. If zucchini releases too much water, increase heat to evaporate quickly. Optional additions include a splash of white wine, red pepper flakes for heat, or a sprinkle of Parmesan before serving.
