  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes (fire-roasted recommended)
  • 1 can (8 ounces) tomato sauce
  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 2 cups low-sodium beef broth
  • 1 packet (1 ounce) taco seasoning (or 3 tablespoons homemade)
  • 1 packet (1 ounce) ranch dressing mix (Hidden Valley recommended)
  • Optional garnishes: shredded cheddar cheese, sour cream, sliced jalapeños, fresh cilantro, diced avocado, crushed tortilla chips, lime wedges

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up with a wooden spoon, until no longer pink (6-8 minutes). Leave about 1 tablespoon of fat in the pan.
  2. Add the diced onion to the skillet and cook for about 3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Transfer the beef and onion mixture to a 6-quart or larger slow cooker using a slotted spoon.
  4. Add the diced tomatoes (with juices), tomato sauce, drained black beans, drained kidney beans, and drained corn to the slow cooker. Stir to combine.
  5. Pour in the beef broth, then sprinkle the taco seasoning and ranch dressing mix over the top. Stir until well incorporated.
  6. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. About 30 minutes before serving, taste and adjust seasoning with salt, pepper, lime juice, or hot sauce if desired.
  8. Serve hot with optional garnishes arranged in a self-serve bar.

Notes

For best flavor, brown the meat well and don’t skip draining the beans. The soup improves overnight, so make it a day ahead if possible. If you forget the ranch packet, stir it in during the last hour of cooking. To thicken, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir in during the last 30 minutes.
