This Spooky Candy Apple Halloween Cocktail is a happy accident turned tradition—a quick, easy drink that tastes exactly like a classic candy apple with a caramel rim and a hint of cinnamon. Perfect for Halloween parties or a cozy night in.

Ingredients

Scale
  • 4 ounces (120 ml) chilled apple cider
  • 1.5 ounces (45 ml) vanilla vodka
  • 0.5 ounce (15 ml) caramel sauce, plus extra for the rim
  • 0.5 ounce (15 ml) fresh lemon juice
  • 1/8 teaspoon ground cinnamon
  • Ice cubes
  • 2 tablespoons caramel sauce (for rim)
  • 2 tablespoons crushed graham crackers or crushed vanilla wafers (for rim)

Instructions

  1. Prep the rim: Pour about 2 tablespoons of caramel sauce onto a small, shallow dish. Spread it into a thin, even layer. In a second dish, spread out 2 tablespoons of crushed graham crackers. Dip the rim of your glass into the caramel, rotating gently to coat the entire edge. Let excess drip off, then dip the caramel-coated rim into the crushed graham crackers. Press lightly so the crumbs stick. Set the glass aside.
  2. Build the cocktail: Fill your prepared glass with ice cubes (about 4-5 large cubes).
  3. Add the liquids: Pour in 1.5 ounces (45 ml) of vanilla vodka, 4 ounces (120 ml) of chilled apple cider, 0.5 ounce (15 ml) of caramel sauce, and 0.5 ounce (15 ml) of fresh lemon juice.
  4. Season and stir: Sprinkle in a tiny pinch of ground cinnamon (about 1/8 teaspoon). Use a bar spoon or long-handled spoon to stir everything together for about 15-20 seconds until the caramel is fully dissolved. Taste and adjust sweetness or tartness if desired.
  5. Garnish and serve: Garnish with a thin apple slice (dipped in lemon water to prevent browning) or a cinnamon stick. Serve immediately while the rim is crunchy and the drink is ice-cold.

Notes

Chill the glass in the freezer for 5-10 minutes before rimming to help the caramel set. Rim glasses right before serving, not hours ahead. For a non-alcoholic version, skip the vodka and add an extra ounce of apple cider plus a splash of ginger ale or sparkling water. Use fresh, unfiltered apple cider for best flavor.
