Ingredients

Scale
  • 12 large eggs (room temperature for easier peeling)
  • 1/3 cup mayonnaise (Hellmann’s or Duke’s recommended)
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon white vinegar
  • 1/2 teaspoon black food coloring (gel or liquid, Wilton brand recommended)
  • A few drops of water (to thin food coloring)
  • Toothpicks (for creating the web pattern)
  • Paprika (for garnish, optional)
  • Fresh chives (finely chopped, for garnish, optional)
  • Black sesame seeds (for garnish, optional)

Instructions

  1. Boil the eggs: Place the 12 eggs in a single layer in a large saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, turn off the heat, cover the pot, and let the eggs sit for exactly 12 minutes.
  2. Ice bath: While the eggs sit, fill a large bowl with ice and cold water. After 12 minutes, transfer the eggs to the ice bath using a slotted spoon. Let them sit for at least 10 minutes to stop cooking and make peeling easier.
  3. Peel carefully: Gently tap each egg on the counter to crack the shell all over. Start peeling from the wider end (where the air pocket is). Run eggs under cold water while peeling to remove stubborn shell fragments. Aim for smooth, unblemished egg whites.
  4. Cut the eggs: Using a sharp knife, slice each egg in half lengthwise. Wipe the knife clean between cuts. Gently pop out the yolks into a small mixing bowl. Arrange the egg white halves on a serving platter, cut side up. Pat dry with a paper towel if needed.
  5. Make the filling: Add mayonnaise, sriracha, yellow mustard, salt, black pepper, and white vinegar to the bowl with the yolks. Use a fork to mash and mix until completely smooth and creamy. Taste and adjust seasoning as desired.
  6. Fill the egg whites: Spoon the yolk mixture into a piping bag or zip-top bag. If using a zip-top bag, squeeze everything into one corner and snip off about 1/4 inch from the tip. Pipe the filling into each egg white half, mounding it slightly in the center.
  7. Create the spiderweb pattern: In a small dish, mix black food coloring with a few drops of water to thin slightly. Dip a toothpick into the colored liquid. Starting from the center of the filling on one egg, gently drag the toothpick outward in a straight line toward the edge. Repeat in a circular pattern to create 4-6 radiating lines. Then, drag the toothpick in curved lines between the spokes to create the web effect. Wipe the toothpick clean between eggs.
  8. Garnish and chill: If using, sprinkle a tiny pinch of paprika over the eggs, or add black sesame seeds. Cover the platter loosely with plastic wrap and refrigerate for at least 30 minutes before serving.

Notes

For easier peeling, use older eggs (buy a week ahead). Add a teaspoon of baking soda to the boiling water to help loosen shells. Do the spiderweb pattern right after piping, before chilling, for best results. The filling should be like thick frosting; adjust consistency with a teaspoon of mayonnaise or pickle juice if needed. Store leftovers in an airtight container in the refrigerator for up to 2 days. Do not freeze.
