  • 6 cups pineapple juice, chilled
  • 4 cups cranberry juice, chilled
  • 2 cups orange juice, chilled
  • 2 cups lemon-lime soda, chilled
  • 1 cup ginger ale, chilled
  • 2 cups frozen mixed berries
  • 1 cup frozen pineapple chunks
  • 1 orange, sliced into rounds
  • 1 lime, sliced into rounds
  • Fresh mint leaves (optional), for garnish
  • 23 pounds food-grade dry ice
  • Thick oven mitts or heavy-duty gloves
  • Metal tongs

Instructions

  1. Chill all ingredients at least 2 hours before serving.
  2. Prepare garnishes 15 minutes before serving: slice orange and lime into thin rounds, rinse frozen berries and pineapple chunks under cold water.
  3. 10 minutes before serving: In a large punch bowl, combine pineapple juice, cranberry juice, and orange juice. Stir gently.
  4. 5 minutes before serving: Pour in lemon-lime soda and ginger ale. Stir gently to combine.
  5. Just before serving: Add frozen berries, pineapple chunks, and citrus rounds.
  6. Right before serving: Put on thick oven mitts or gloves. Using metal tongs, carefully break dry ice into 1-2 inch chunks.
  7. Immediately before serving: Using tongs, gently place 2-3 chunks of dry ice into the punch bowl. Do not drop them in.
  8. Stir gently to distribute the fog effect.
  9. Serve immediately using a ladle. Ensure no pieces of dry ice end up in cups.
  10. Replenish dry ice every 20-30 minutes as the fog effect fades.

Notes

Never consume dry ice. Do not let anyone drink the punch until the dry ice has completely sublimated from their cup. Handle dry ice with thick gloves only. Avoid metal bowls as extreme cold can damage them. For best fog effect, add dry ice right as guests gather. Store extra dry ice in a cooler with lid slightly cracked.
