Ingredients

Scale
  • 8 oz Brie cheese (wheel)
  • 6 oz Aged sharp cheddar
  • 4 oz Goat cheese log
  • 4 oz Manchego
  • 4 oz Prosciutto, thinly sliced
  • 4 oz Sopressata, sliced
  • 810 Fresh figs, halved
  • 1 Green apple, sliced
  • 1 cup Red grapes, small clusters
  • 1/4 cup Honey
  • 1/2 cup Pecans
  • 1/2 cup Smoked almonds
  • 1/2 cup Olives (Castelvetrano and Kalamata mix)
  • 1 Crusty baguette, sliced and toasted
  • 1/4 cup Fig jam or chutney
  • Fresh rosemary sprigs for garnish

Instructions

  1. Toast the pecans: In a small skillet over medium heat, toast pecans for 3-4 minutes until fragrant. Sprinkle with a pinch of salt and cinnamon, toss, then set aside to cool.
  2. Prepare the fruit: Rinse figs, grapes, and apple. Halve figs lengthwise. Slice apple into thin wedges (toss with lemon juice to prevent browning if desired). Leave grapes in small clusters.
  3. Slice the cheese: Remove brie from fridge 20 minutes before serving. Slice cheddar and manchego into thin triangles or rectangles. Leave goat cheese log whole or slice into rounds. Do not slice brie; place whole wheel on board.
  4. Arrange the board: Place honey, fig jam, and olives in small ramekins and set on board. Place cheeses: brie wheel in one corner, goat cheese in another, fan out sliced cheddar and manchego in between.
  5. Add the meats: Fold prosciutto into loose ribbons or waves near brie. Fan out sopressata slices next to cheddar.
  6. Fill in with fruit and nuts: Nestle fig halves around board near cheeses. Scatter apple slices and grape clusters in gaps. Sprinkle toasted pecans and almonds over open spaces.
  7. Add the bread and garnish: Arrange baguette slices or crackers around edges. Tuck fresh rosemary sprigs here and there.
  8. Drizzle and serve: Just before serving, drizzle a little honey over brie and fig halves. Serve remaining honey on the side.

Notes

Take cheese out of fridge at least 20 minutes before serving for best flavor. Don’t overcrowd the board; leave breathing room between items. Drizzle honey over figs and brie just before serving for visual appeal. Toast pecans carefully as they burn quickly.
