  • 1 large bag (16 ounces) restaurant-style tortilla chips
  • 1 pound ground beef (80/20)
  • 1 packet (3 tablespoons) taco seasoning
  • 1/3 cup water
  • 2 cups shredded Mexican blend cheese
  • 1 can (15 ounces) refried beans, warmed
  • 2 medium Roma tomatoes, diced
  • 1/2 medium red onion, finely diced
  • 23 jalapeños, thinly sliced (seeds removed)
  • 1/2 cup sliced black olives
  • 1/4 cup fresh cilantro, roughly chopped
  • 1 cup sour cream
  • 1 cup guacamole
  • 1/2 cup salsa
  • 1/2 cup crumbled queso fresco (optional)
  • 1/4 cup pickled jalapeños (optional)
  • Hot sauce (optional)
  • 23 lime wedges (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a large baking sheet with foil or parchment paper.
  2. Cook ground beef in a skillet over medium-high heat for 6-8 minutes until browned. Drain excess fat. Add taco seasoning and water, stir, and simmer for 2-3 minutes until thickened. Set aside.
  3. Warm refried beans in a small saucepan over low heat or in the microwave for 1-2 minutes.
  4. Spread tortilla chips evenly on the prepared baking sheet in a single layer with some overlapping.
  5. Spoon dollops of warm refried beans over the chips, then scatter the seasoned ground beef evenly on top.
  6. Sprinkle shredded Mexican blend cheese generously over the chips, meat, and beans.
  7. Bake for 10-12 minutes until cheese is melted and bubbly.
  8. Remove from oven and immediately top with diced tomatoes, red onion, jalapeños, black olives, and fresh cilantro.
  9. Place small bowls of sour cream, guacamole, and salsa on the board or around the edges of the baking sheet.
  10. Finish with crumbled queso fresco, pickled jalapeños, a squeeze of lime juice, and hot sauce if desired. Serve immediately.

Notes

Layer beans and meat under the cheese to keep chips crisp. Drain tomatoes to avoid sogginess. Use room-temperature sour cream and guacamole for best temperature contrast. Make your own taco seasoning for better flavor control.
