  • 1/3 cup milk
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of nutmeg
  • 1 tablespoon olive oil
  • Optional: 1/4 cup diced onion or bell pepper
  • Optional: 1/4 cup cooked crumbled sausage or bacon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease your muffin tin generously with non-stick cooking spray, butter, or coconut oil.
  3. Sauté the spinach (optional but recommended): Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and cook for 1-2 minutes, until it wilts. Let cool for a minute.
  4. Whisk the eggs: Crack 8 large eggs into a large mixing bowl. Add the milk, salt, pepper, and nutmeg. Whisk vigorously for about 30 seconds until frothy.
  5. Add the cheese: Stir in the shredded cheddar and Parmesan cheese. Reserve about 2 tablespoons of cheddar for sprinkling on top.
  6. Fold in the spinach: Add the wilted spinach to the egg mixture and stir gently until evenly distributed.
  7. Fill the muffin cups: Pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.
  8. Sprinkle the reserved cheese on top.
  9. Bake for 15-18 minutes, until the edges are golden brown and the centers are set. A toothpick inserted into the center should come out clean.
  10. Cool in the pan for 5 minutes, then run a butter knife around the edges and gently pop them out. Place on a wire rack to cool completely.

Notes

Do not overmix the eggs. Watch the baking time closely. Use room temperature eggs if possible. Do not skip the nutmeg. Grease the pan well. Let them cool completely before storing.
